Tasty Tuesday #28 Turkey Chilli


Today I have a more practical recipe which you can have as a dinner. We only recently starting changing the beef mince up for turkey mince and I much prefer it!

Ingredients:
  • 8oz/225g kidney beans
  • 1lb/450g turkey mince
  • 1tbsp oil
  • 2 medium onions, chopped
  • 2 cloves of garlic, crushed
  • 1 heaped tbsp spelt/gluten-free flour
  • 2 heaped tbsp tomato puree
  • 250ml + extra hot stock 
  • 1 level tsp dried chilli/powder
  • 1 level tsp ground cumin
  • 1 large green pepper, de-seeded and chopped
  • salt, to taste






Method:

1. Begin by prepping the beans by covering them in cold water. Then bring them to a boiling point and boil for 10 minutes. Turn the heat off and soak them for 1 hour.
2. Heat the oil and cook the garlic and onions gently for 6 minutes.
3. Turn the heat off and add the turkey mince, turning up the heat, cooking it and stirring it a bit.
4. Add the flour and stir it to soak up the juices. Then combine the tomato puree and the stock and add it gradually to the meat and onions.
5. Add the chilli, green peppers and  drained kidney beans and bring it to a simmer.
6. Add a lid and cook for 30-45 mins.
