Tasty Tuesday #21 The Best Chocolate Biscuit Cake

Today's recipe is my new favourite! They are extremely indulgent chocolate biscuit cake squares. I discovered the recipe in 'Green & Blacks Chocolate Recipes' book. The book is filled with delicious looking chocolate recipes. Here is my version of their 'Konditor & Cook Chocolate Biscuit Cake'. 

Ingredients:
  • 125g unsalted butter
  • 75g golden syrup
  • 200g chocolate ( I used dark, but you can do half-and-half if you please)
  • 1 egg
  • 50-100g digestive biscuits (They suggest 50g, but you can double it, or eyeball it)
  • *50g halved walnuts
  • *50g sultanas
  • *50g halved hazelnuts
* These ingredients depend on your favourite fillings. I would suggest using marshmallows, cherries, chocolate chunks, etc...

Method:
  1. Line a small brownie pan or loaf tin with baking parchment paper/greaseproof paper.
  2. Melt the chocolate in a heatproof bowl that is suspended over a saucepan of simmering water.
  3. Melt the butter and golden syrup in a small saucepan over little heat until it starts to boil.
  4. Add the butter and golden syrup mixture into the chocolate and stir until combined.
  5. Next beat an egg in a cup before pouring it into the chocolate mixture.
  6. Slowly and continuously beat the egg and chocolate mixture to pasteurise the egg. It does get thick and difficult to stir.
  7. In a separate bowl, add the dry ingredients; walnuts, biscuits, sultanas, hazelnuts. 
  8. Pour the chocolate mixture onto the dry ingredients and mix together with a spatula until the dry ingredients are coated with the chocolate. 
  9. Press the mixture into the tin and leave it to set in the fridge for 4 hours. Then remove it from the fridge, peel the paper off and cut into slices.
  10. They are best served straight from the fridge.
